SOMETHING STICKY

Okay, I have to admit that I have a weak spot for sticky date pudding. I am forever replicating my favorite sweets into healthy alternatives. Your usual sticky date pudding is full of butter, dairy and refined sugar making it calorie central and stuck on your hips.

I didn't plan on blogging this recipe so please excuse the poor photo!! May not look good but sure tastes good.

I’ve made this recipe out of 100% healthy ingredients and of course it’s gluten and dairy free.. winning!



 







PUDDING

20 dates, chopped (I use dried)
1/2 cup boiling water
1/3 cup coconut flour
1 cup almond meal
1/2 cup almond milk
2 tsp baking powder
1 1/2 tbsp chia seeds
2 tbsp coconut oil
3 tbsp coconut milk
1 tbsp dark agave syrup
1 tsp vanilla paste
1/4 tsp salt

CARAMEL SAUCE

25 dates, soaked in 1 1/3 cup boiling water
2 tbsp coconut cream
1 tbsp dark agave syrup
2 tbsp coconut oil

Preheat your oven on 180 degrees. Chop your dates into small pieces and place them in a bowl with boiling water. Let soak for 10 minutes.
Pour dates (including water) into a large mixing bowl and add remaining pudding ingredients. Allow to sit for 5 minutes.
Line 8 mini loaf cases and pour mixture evenly. Cook for 50 minutes.
When pudding is ready remove from oven. (You should be able to skewer them cleanly) Remove from cases and let sit for 10 minutes.
Soak dates for the sauce for 10 minutes. Combine and blend remaining ingredients in a food processor. Transfer to a pouring cup.
Plate your pudding and pour caramel sauce on top. Add a dollop of coconut cream to top it off.. YUM!
