We all love a good banana muffin right? But unfortunately most muffins or fruit breads on offer to us are full of sugar making it not so healthy. 

Here is an interesting fact that we bet you didn't know.
One slice of McDonalds Cafe Banana bread has a shocking 508 calories, 35grams of sugar, that's 71grams of carbohydrates and a whopping 25grams of fat! Don’t be tricked into products marketed as ‘healthy’ because clearly this is definitely not the best healthy alternative.

BUTTTTT... Lucky enough for you, you’ve found my blog and don’t have to shy away from enjoying a sneaky muffin or cake. This banana muffin recipe is the perfect option for anyone who enjoys something sweet for breakfast or snack.

My Skinny Banana Muffin recipe has no added refined sugar, contains a low amount of good fats and offers a great source of protein! They are packed with nutritious ingredients that are good for your body. We enjoy eating these delicious muffins warm with our hazelnut butter.

Nutrition Count per large muffin 
Cal 109 Fat 2.5  Sugar 3.9g  Carb 16g  Pro 4.2 

Ingredients
2 Large Bananas (mashed)
1 cup Gluten free quick oats
1 Whole egg
1 Egg white
1 tsp Baking powder
1/4 tsp Cinnamon
1/4 tsp Vanilla Essence 
1 tbsp Sugar free maple syrup or sweetener (optional)
1/3 cup Unsweetened Almond Milk

Add in options: dark cocao chocolate nibs, blueberries, almonds or anything you may fancy.

Instructions

1 Pre-heat your oven to 180 degrees and spray a muffin tin with organic coconut oil or use cupcake cases.

2 Combine all ingredients in a large bowl and mix well until a smooth mixture is formed.

3 Divide mixture evenly into 6 large or 12 small cupcake cases 

(Optional) Top each muffin with a few almonds, chocolate chips or coconut flakes


5 Bake muffins in the oven for 25-30 mins* or until slightly golden

Tip: To test if cooked use a tooth pick to poke into the center.. If it comes out dry they should be cooked!

This recipe can also be made into a bread
