RAW MACADAMIA MANGO & LIME CHEESECAKES

The treat you won’t feel guilty about! This little bad boy (or should I say good boy) is one of my favourite raw vegan delights. Flavour combos that taste so good you wouldn’t even believe it could be healthy. No refined sugar and nothing artificial.. just pure natural ingredients. 



Da dada daa… RAW Macadamia Mango & Lime Cheesecakes! 

Let’s get started with the BASE
1/2 cup pistachios nuts
1/2 cup macadamia nuts
1/4 cup desiccated coconut
Zest of 1 lime
10 pitted medjool dates
1 tbsp Coconut Oil

1 Process the nuts, coconut and lime zest. Add the dates and coconut oil. Continue to process until a dough is formed. (If the mixture seems too dry add 1 tbsp of cold water at a time until the correct consistency is achieved).
2 Press dough evenly into the bottom of 8 mini moulds or a small lined baking tray.
3 Set aside as you prepare the filling.
Tip: Save a little of the base to crumble on top to decorate.

Onto the FILLING
Flesh of 2 small mangos
1 cup cashews (soaked overnight)
2 tbsp coconut oil
1 tbsp rice malt syrup
Juice of 1 lime
1/2 cup coconut water

1 Blend all the ingredients until a smooth mixture is formed. (You may need to add more coconut water if it isn’t becoming smooth)
2 Pour mixture on top of your base you prepared earlier. Freeze overnight.
3 Let the cheesecakes sit at room temperature for 30 minutes before eating.


There you have it. Simple. Easy. Healthy.
